Ingredients

1 tbsp olive oil
1 lb lean ground turkey
1 medium onion, diced
1 red bell pepper, diced
2 celery stalks, diced
3 cloves garlic, minced
1 tbsp chili powder
2 tsp ground cumin
1 tsp smoked paprika
1/2 tsp dried oregano
1/4 tsp cayenne pepper
Salt and black pepper to taste
2 cans (15 oz each) black beans, drained and rinsed
1 can (14.5 oz) diced tomatoes
4 cups low-sodium chicken broth
1 cup frozen corn
Juice of 1 lime
1/4 cup fresh cilantro, chopped


Instructions

Heat olive oil in a large Dutch oven over medium heat.
Add ground turkey and cook for 5 to 7 minutes until browned and crumbled.
Stir in onion, bell pepper, and celery; cook for 5 minutes until softened.
Add garlic, chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper; cook for 30 seconds to bloom.
Pour in black beans, diced tomatoes, and chicken broth.
Bring to a simmer for 10 minutes.
Stir in frozen corn and cook for an additional 2 to 3 minutes.
Remove from heat and stir in lime juice and fresh cilantro before serving.

Notes
