Ingredients
1¾ cups Greek yogurt
4 large eggs
2½ cups all-purpose flour (or whole wheat)
¼ cup ground flaxseed
1 tbsp baking powder
2 tsp salt
1 tsp garlic powder
½ tsp red pepper flakes (optional)
1½ cups spinach (chopped & cooked, optional)
½ cup chives (or green onions, optional)
1½ cups shredded cheddar cheese (optional)
1–2 cups cooked turkey or chicken (optional)
Instructions
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or prepare a greased muffin tin.
In a large mixing bowl, whisk together the Greek yogurt and eggs until smooth.
Gradually add the flour, ground flaxseed, baking powder, salt, and garlic powder, mixing until a thick dough forms.
Gently fold in any optional add-ins like cooked spinach, cheddar cheese, chives, and turkey or chicken.
Using a scoop or spoon, form the dough into rounds and place them on the baking sheet or muffin tin.
Bake for 18–25 minutes, or until the biscuits are golden brown and firm in the center.
Allow the biscuits to cool for a few minutes before serving.
Notes
For a vegan version, substitute eggs with 4 flax eggs (4 tbsp ground flax mixed with 12 tbsp water) and use a vegan-friendly yogurt and cheese.
These biscuits store well in the refrigerator for up to 5 days or in the freezer for 2–3 months.
