Ingredients
4 Flour or Corn Tortillas
1 tbsp Olive Oil
1 small Red Onion, diced
2 cloves Garlic, minced
1 small Red Bell Pepper, diced
1 can (14 oz) White Beans, rinsed
90 ml Buffalo Hot Sauce
100 g Sour Cream
1 tsp Smoked Paprika
0.5 tsp Cayenne Pepper
0.5 tsp Oregano
0.5 tsp Cumin
150 g Cheese Blend
10 g Fresh Cilantro
Instructions
Heat olive oil in a large non-stick skillet over medium heat.
Add diced onion and red bell pepper, cooking for 5 to 6 minutes until softened.
Stir in minced garlic and cook for 1 to 2 minutes until fragrant.
Add white beans, buffalo hot sauce, sour cream, paprika, cayenne, oregano, and cumin to the skillet.
Lightly mash about 30 percent of the beans with a potato masher or wooden spoon to create a rustic texture.
Warm the tortillas in a separate pan or microwave.
Assemble tacos by placing the bean mixture into warm tortillas and topping with cheese and fresh cilantro.
