Ingredients
1 lb boneless skinless chicken breast, cut into 3/4-inch pieces
1 lb broccoli, cut into florets
1/2 lb white button mushrooms, thickly sliced
1 small yellow onion, sliced into strips
2 Tbsp cooking oil, divided
1 Tbsp sesame oil
1 tsp fresh ginger, grated
2 cloves garlic, grated
Black pepper to taste
2/3 cup low-sodium chicken broth
3 Tbsp low-sodium soy sauce
2 Tbsp light brown sugar
1 Tbsp cornstarch
1 Tbsp sesame oil
Instructions
Whisk chicken broth, soy sauce, brown sugar, cornstarch, 1 Tbsp sesame oil, ginger, garlic, and pepper in a bowl until smooth.
Heat 1 Tbsp cooking oil in a large skillet or wok over medium-high heat.
Sear chicken pieces until browned and fully cooked; remove and set aside.
Add remaining 1 Tbsp cooking oil to the pan and add broccoli, mushrooms, and onion.
Stir-fry vegetables until tender-crisp.
Return chicken to the pan and pour the sauce over the mixture.
Toss everything together until the sauce thickens and coats all ingredients evenly.
Notes
Ensure all vegetables are cut to similar sizes for even cooking. If the sauce thickens too quickly, add a splash of water or extra broth. Store leftovers in an airtight container for up to 3 days.
