Description

These Chicken Parmesan Zucchini Boats deliver the comfort-food satisfaction of your favorite Italian restaurant dish. You get 32 grams of protein, under 300 calories, and a meal that tastes so indulgent you’ll forget you’re eating clean.

Ingredients

For the Boats:

  1. 2 medium zucchini (about 8-10 inches long each; look for firm ones without soft spots)
  2. 1 lb boneless, skinless chicken breast (or about 4 oz per person; buy individually frozen if you need smaller portions)
  3. ¾ cup marinara sauce (use a quality brand like Rao’s or Primal Kitchen for lower sugar; about 3 tbsp per boat)
  4. ¾ cup whole milk mozzarella, shredded (fresh is fine, but shredded saves time)
  5. ¼ cup grated Parmesan cheese
  6. 2 tbsp olive oil (divided)
  7. 1 tsp Italian seasoning (or ½ tsp each oregano and basil)
  8. ½ tsp garlic powder
  9. ¼ tsp red pepper flakes (optional, adds nice kick)
  10. Salt and black pepper to taste

Optional Flavor Boosters:

  • 1 tbsp fresh basil, chopped (add at the end for brightness)
  • 2 cloves garlic, minced (sauté with the sauce for depth)
  • ¼ cup diced fresh tomatoes (layer under the sauce)

Instructions

Step 1: Prep the Zucchini Boats

Halve zucchini lengthwise, scoop centers (leave ¼-inch border), and season with salt & pepper.

Step 2: Prep the Chicken

Pat dry, even thickness, and season with Italian seasoning, garlic, salt, pepper, and optional chili flakes.

Step 3: Sear the Chicken (4-5 minutes)

Cook in olive oil over medium-high heat, 2–3 minutes per side until golden (not fully cooked).

Step 4: Prepare the Zucchini (1 minute)

Place on a baking sheet, brush insides with olive oil.

Step 5: Dice and Layer

Cut chicken into cubes and divide evenly among zucchini boats.

Step 6: Sauce and Cheese

Top with marinara, mozzarella, and Parmesan.

Step 7: Bake Until Golden (10-12 minutes)

Bake at 400°F (205°C) until zucchini is tender and cheese is bubbly and golden.

Step 8: Rest and Serve (2 minutes)

Let rest 2 minutes, then serve.

Notes

Zucchini Selection: Choose medium zucchini (8-10 inches) that are firm with no soft spots. They’re tender but sturdy enough for scooping.

Temperature Check: Use an instant-read thermometer to hit 165°F (74°C) for perfectly cooked chicken without drying it out. Make-Ahead Magic: Assemble these boats completely up to 24 hours ahead and store covered in the fridge. Add 2-3 extra minutes to baking time.

Storage: Refrigerate leftovers for up to 3 days. Freeze for up to 2 months before or after baking. Scaling: Double everything for four servings, or halve for one serving.
