Ingredients
1 lb boneless, skinless chicken thighs
2–3 tbsp lime juice
2 tbsp olive oil
1 tsp chili powder
1 tsp paprika
1 tsp ground cumin
1 tsp garlic powder
½ tsp onion powder
Salt & black pepper
8 small corn tortillas (street-size, doubled as needed)
½ cup white onion (finely diced)
¼ cup fresh cilantro (chopped)
Lime wedges
Salsa (optional)
Instructions
Combine chicken, lime juice, olive oil, chili powder, paprika, cumin, garlic powder, onion powder, salt, and pepper in a bowl. Marinate for at least 30 minutes.
Heat a skillet or grill over medium-high heat. Cook marinated chicken 5–7 minutes per side until fully cooked. Let rest before chopping.
Warm tortillas in a dry pan or over a flame. For extra structure, use 2 tortillas per taco.
Place chopped chicken on tortillas and top with onions, cilantro, and a squeeze of lime. Add salsa if desired.
Serve immediately for optimal freshness.
