Description

This nutrient-dense Chicken Zucchini Stir Fry is the perfect weeknight solution for busy professionals seeking a high-protein meal. By combining succulent chicken thighs and crisp, fresh zucchini in a savory, light sauce, this dish offers a balanced profile that supports muscle recovery without the heavy starch found in takeout alternatives. It is simple to prepare, incredibly flavorful, and provides clean energy to fuel you through the day.

Ingredients

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
1 teaspoon cornstarch
1/4 cup light soy sauce
1 teaspoon sesame oil
2 teaspoons honey
1 tablespoon rice vinegar
1 tablespoon neutral cooking oil
3 garlic cloves, smashed
1 medium zucchini, halved lengthwise and sliced
1 tablespoon oyster sauce
Freshly ground black pepper, to taste
Steamed rice or noodles for serving

Instructions

In a medium bowl, whisk together the cornstarch, soy sauce, sesame oil, honey, and rice vinegar until smooth.
Add the chicken thigh pieces to the marinade and toss to coat thoroughly.
Let the chicken marinate for 30 minutes to ensure tenderness and flavor penetration.
Heat the neutral oil in a large wok or skillet over medium-high heat until it shimmers.
Add the smashed garlic cloves and stir-fry for 30 seconds until fragrant.
Add the marinated chicken to the pan and sear until browned and cooked through.
Add the sliced zucchini and stir-fry until tender-crisp, about 3 to 5 minutes.
Stir in the oyster sauce and season with black pepper, tossing to coat everything evenly.
Serve warm over steamed rice or noodles.

Notes

Ensure the oil is hot before adding the chicken to get a good sear. Store leftovers in an airtight container for up to 3 days. Adjust the heat level by adding chili flakes if desired.
