Ingredients
1 pound lean ground beef
1 tablespoon avocado oil
4 cups green cabbage, thinly sliced
1 medium carrot, julienned
4 ounces shiitake mushrooms, sliced
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 green onions, sliced
1 teaspoon cumin powder
1/2 teaspoon black pepper
1 teaspoon sesame seeds (optional garnish)
3 tablespoons low-sodium soy sauce
1 tablespoon vegetarian oyster sauce
1 tablespoon rice vinegar
1 teaspoon toasted sesame oil
1 teaspoon honey
1 tablespoon cornstarch
2 tablespoons water
Instructions
In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, honey, cornstarch, and water until smooth.
Heat avocado oil in a large skillet or wok over medium-high heat.
Add ground beef and cook for 5-6 minutes, breaking into crumbles, until browned.
Add mushrooms and carrots; cook for 3 minutes until softened.
Add garlic, ginger, and cabbage; stir-fry for 4-5 minutes until cabbage is tender-crisp.
Pour the sauce over the mixture and stir until thickened, about 1-2 minutes.
Season with cumin and black pepper.
Garnish with green onions and sesame seeds before serving.
Notes
