Description

These Date Protein Balls deliver a fast and energizing snack packed with natural sugars from Medjool dates, protein from almonds and optional protein powder, and a satisfying flavor. Ideal for on-the-go moments, they’re gluten-free, dairy-free, and perfect for busy lifestyles.


Ingredients

¾ cup almonds
½ cup Medjool dates (pitted)
⅓ cup desiccated coconut (plus extra for coating)
1 tsp vanilla extract
2 tbsp cocoa powder
Pinch of salt
1 tbsp vanilla protein powder (optional)


Instructions

Add the ¾ cup almonds, ½ cup pitted Medjool dates, ⅓ cup desiccated coconut, 1 tsp vanilla extract, 2 tbsp cocoa powder, a pinch of salt, and the optional 1 tbsp vanilla protein powder into a food processor.
Begin processing until ingredients break down, pausing to scrape the sides as needed, until a sticky dough forms.
Scoop approximately 1 tbsp of the dough at a time and roll it into bite-sized balls using clean hands.
If desired, roll each ball in extra desiccated coconut for texture and to prevent sticking.
Store the finished balls in an airtight container for easy access.

Notes

These can be prepared in advance and stored for up to a week in the refrigerator or frozen for longer storage.
Feel free to customize with additional nuts, seeds, or flavorings like cinnamon.
If the dough is too dry, add a few drops of water or a spoonful of almond butter to help it come together.
