Ingredients
12 large eggs
2 tablespoons milk
1 teaspoon salt
1/2 teaspoon black pepper
12 English muffins
12 slices cheddar cheese (or preferred halal-certified cheese)
12 portions pre-cooked turkey bacon, sausage, or halal meat alternative
Instructions
Preheat oven to 325°F (165°C)
Whisk eggs, milk, salt, and pepper in a bowl until fully combined
Pour mixture into a greased 9×13-inch baking pan
Bake for 18-22 minutes until eggs are just set
Cool slightly, then cut into 12 even squares
Assemble sandwiches by placing an egg square on an English muffin half, adding cheese and meat, then closing with the other muffin half
Wrap each sandwich in plastic wrap or foil and store in a freezer bag for up to one month
