Description

This comforting, hearty soup uses simple pantry ingredients to create a flavor-packed meal that is perfect for meal prepping. Infused with fresh aromatics like garlic, onion, and herbs, it offers a wholesome, performance-fueling meal that supports muscle recovery while staying budget-friendly.


Ingredients

1 lb (450 g) dry green or brown lentils, sorted and rinsed
2 tablespoons extra-virgin olive oil
1 large onion, diced
3 celery ribs, diced
3 garlic cloves, minced
6 cups vegetable broth
1 (28-ounce) can diced or crushed tomatoes
2 bay leaves
2 tablespoons fresh oregano (or 2 teaspoons dried)
2 tablespoons fresh mint (or 2 teaspoons dried)
Salt and black pepper to taste
2 tablespoons apple cider vinegar for finishing
Extra-virgin olive oil for drizzling


Instructions

Soak the lentils in salted water for one to three hours, then drain and rinse well.
Heat the olive oil in a large Dutch oven over medium heat.
Add the onion and celery, sautéing for 3-5 minutes until softened.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Add the rinsed lentils, vegetable broth, tomatoes, and bay leaves.
Bring the mixture to a boil, then reduce heat and simmer until the lentils are tender, about 20-25 minutes.
Stir in the fresh oregano and mint.
Season with salt and pepper, and finish with a splash of apple cider vinegar and a drizzle of olive oil before serving.

Notes

Substitute apple cider vinegar for red wine vinegar to keep the dish non-alcoholic while retaining the necessary acidity. For a thicker consistency, you can blend a small portion of the soup before serving.
