Quick, crispy, cheesy tacos with 32g of protein in 30 minutes. A satisfying meal packed with lean beef, vegetables, and healthy toppings for a balanced, high-protein dinner.
Ingredients
1 lb (450g) ground beef
1 tbsp olive oil (optional)
1 small onion (finely diced)
2–3 cloves garlic (minced)
1–2 tbsp taco seasoning or chili powder, cumin, paprika mix
2 tbsp tomato paste
¼ cup water or broth
Salt & pepper to taste
8–10 small tortillas (corn or flour)
1–1½ cups shredded cheese (cheddar or Mexican blend)
Shredded lettuce
Diced tomatoes
Sour cream or Greek yogurt
Avocado or guacamole
Fresh cilantro
Lime wedges
Instructions
Heat a skillet over medium heat. Sauté onion until softened (2-3 minutes), then add garlic for 30 seconds.
Add ground beef, break apart, and cook until browned with no pink. Drain excess fat.
Stir in taco seasoning, tomato paste, and broth. Simmer 5-10 minutes.
Heat tortillas (grill or skillet) and scoop beef mixture into each. Top with cheese, then bake at 375°F (190°C) for 5 minutes or fry briefly.
Assembly: Add lettuce, tomatoes, sour cream, avocado, cilantro, and lime.
Notes
Use whole wheat tortillas for added fiber.
Substitute Greek yogurt for sour cream as a lower-fat option.
Adjust cheese quantity based on dietary needs.
