Description

A quick, high-protein breakfast burrito with 32g of protein per serving, packed with eggs, spinach, black beans, and Greek yogurt. Perfect for a filling morning meal.


Ingredients

4 large eggs
4 egg whites
Salt & pepper to taste
6 cups baby spinach
15 oz black beans (rinsed & drained)
½ cup salsa (or pico de gallo)
¼ cup shredded cheddar, feta, or Mexican blend cheese
6 tbsp fat-free Greek yogurt
6 whole-wheat tortillas (8-inch)


Instructions

Wrap tortillas in foil and warm in a 300°F oven for 15 minutes.
Whisk eggs, egg whites, salt, and pepper; scramble in a pan over medium-low heat for 4-5 minutes.
Cook black beans and spinach in a skillet for 3 minutes until spinach wilts.
Combine cooked eggs, beans, spinach, cheese, salsa, and Greek yogurt in a bowl.
Spoon mixture into warmed tortillas, fold tightly into burritos.

Use low-sodium salsa for a lower sodium option
