Ingredients

5 cups full-fat Greek yogurt (plain or vanilla)

4 scoops chocolate protein powder

34 tbsp unsweetened cocoa powder

1 tsp vanilla extract

2 tbsp real maple syrup

Optional Toppings:

Whipped cream

Shaved chocolate

Fresh berries


Instructions

1. Add Greek yogurt, chocolate protein powder, and cocoa powder to a large mixing bowl. Break up cocoa clumps with the whisk before adding wet ingredients.

2. Pour maple syrup and vanilla extract into the bowl. These liquids help hydrate the cocoa powder and distribute protein powder evenly.

3. Whisk everything together for 2-3 minutes until completely smooth with no lumps remaining. Pay attention to the bottom and sides where cocoa settles. The mixture should look glossy and uniform.

4. Cover the bowl and refrigerate for about 1 hour. The pudding thickens as Greek yogurt settles and protein powder fully hydrates. This also allows flavors to meld.

5. Spoon the thickened pudding into serving cups or bowls, dividing evenly among four portions. Each cup holds approximately 1¼ cups of pudding.

6. Top with whipped cream, shaved chocolate, or fresh berries if desired. Serve chilled immediately.

Use full-fat Greek yogurt for best creaminess and texture. Sift cocoa powder before mixing to prevent gritty texture. Whisk the full 2-3 minutes for complete hydration.
