It is a perfect solution for busy weeknights, offering a balanced macronutrient profile, high fiber content, and minimal cleanup without sacrificing flavor.
Ingredients
1 pound lean ground beef
0.5 cup finely chopped onion
0.5 tablespoon minced garlic
2 cups diced red bell pepper
2 tablespoons low-sodium taco seasoning
3 cups medium shell pasta
1 tablespoon tomato paste
2 cups low-sodium beef broth
2 cups water
1 cup shredded sharp cheddar cheese
Instructions
Place a large skillet or Dutch oven over medium-high heat and spray with non-stick cooking spray.
Add the lean ground beef, onion, garlic, and diced red bell pepper to the pan.
Cook for 10 minutes, stirring occasionally, until the beef is browned and vegetables are tender.
Stir in the tomato paste and taco seasoning until the beef is thoroughly coated.
Add the dry pasta, beef broth, and water to the skillet, stirring to combine.
Bring the mixture to a simmer, then reduce heat and cook for 10-12 minutes, or until the liquid has reduced and pasta is al dente.
Remove from heat and stir in the shredded sharp cheddar cheese until melted and smooth.
Notes
Ensure the pasta is fully submerged in the liquid for even cooking. If the sauce is too thick before the pasta is done, add an extra splash of water. Store leftovers in an airtight container for up to 3 days.
