Ingredients
1.5 lbs boneless, skinless chicken breasts

2 tbsp fresh lime juice

3 garlic cloves, minced
1 tsp ground cumin
1 tsp smoked paprika
1 tsp chili powder
1 tsp salt
0.5 tsp black pepper
1 large ripe mango, diced
0.25 cup red onion, finely diced
1 small jalapeño, seeded and minced
0.25 cup fresh cilantro, chopped
Instructions
Whisk olive oil, honey, lime juice, lime zest, garlic, cumin, paprika, chili powder, salt, and pepper in a bowl to create the marinade.
Place chicken in the marinade, coat thoroughly, and refrigerate for 15-30 minutes.
Prepare the mango salsa by combining diced mango, red onion, jalapeño, and cilantro in a small bowl.
Heat a cast iron skillet or grill pan over medium-high heat.
Cook the chicken until reaching an internal temperature of 165°F, about 5-7 minutes per side.
Let the chicken rest for 5 minutes before slicing, then top with the prepared mango salsa.
