Ingredients

1 lb ground chicken
1/2 cup breadcrumbs
1/4 cup Parmesan cheese, grated
1 large egg
3 cloves garlic, minced
1 tsp Italian seasoning
Fresh parsley, chopped
Salt and black pepper to taste
2 tbsp olive oil, divided
1 onion, diced
8 oz mushrooms, sliced
1 cup chicken broth
3/4 cup heavy cream
Additional Parmesan and parsley for garnish


Instructions

In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan, egg, part of the minced garlic, Italian seasoning, parsley, salt, and pepper until just incorporated.
Shape the mixture into 1 to 1 1/2-inch uniform meatballs using your hands or a cookie scoop.
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add meatballs in an even layer and cook for 8-10 minutes, turning occasionally until golden brown and cooked through; remove to a plate.
In the same skillet, add the remaining tablespoon of olive oil and sauté the onions for 3-4 minutes until translucent.
Add the sliced mushrooms and remaining garlic to the pan, cooking until softened.
Pour in the chicken broth and heavy cream, bringing the mixture to a simmer.
Return the meatballs to the skillet, simmering for another 5 minutes to let the sauce thicken and flavors meld.
Garnish with extra Parmesan and parsley before serving.

Notes

Ensure the meatballs are not overcrowded in the skillet to achieve a good sear. Store leftovers in an airtight container for up to 3 days. Adjust salt levels based on the brand of chicken broth used.
