Ingredients
1.5 pounds boneless skinless chicken breasts or tenders, cut into 1-inch cubes
1 teaspoon garlic powder
0.25 teaspoon salt
0.25 teaspoon black pepper
0.25 teaspoon red pepper flakes
2 tablespoons olive oil, divided
0.5 cup diced yellow onion
2 cups fresh asparagus, cut into 1-inch pieces
1 tablespoon minced garlic
8 ounces dry orzo
2.5 cups low-sodium chicken broth
2 sprigs fresh thyme
0.33 cup half-and-half
0.33 cup freshly grated Parmesan cheese
2 cups fresh spinach
Optional: Chopped fresh parsley and extra Parmesan for garnish
Instructions
Place cubed chicken in a bowl and toss with garlic powder, salt, pepper, and red pepper flakes.
Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
Add chicken and cook for 10-12 minutes until golden and cooked through; remove to a plate.
In the same skillet, heat remaining oil and sauté onion and asparagus until onion is translucent, about 3-5 minutes.
Add minced garlic and cook for 1 minute until fragrant.
Stir in dry orzo and toast for 1-2 minutes.
Pour in chicken broth and add thyme sprigs, scraping the bottom of the pan to release browned bits.
Bring to a simmer, cover, and cook for 8-10 minutes or until orzo is tender and liquid is mostly absorbed.
Remove thyme stems and stir in half-and-half, Parmesan, and spinach, cooking until spinach is wilted.
Fold the cooked chicken back into the skillet and heat through before serving.
Notes
Use a deep skillet or Dutch oven to prevent crowding. You can substitute half-and-half with heavy cream for a richer sauce or whole milk for a lighter version. Ensure the chicken is thoroughly browned for maximum flavor depth.
