Ingredients
1 lb chicken breast, cut into small cubes
2 tbsp soy sauce
1 tbsp honey
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp fresh ginger, grated
1 clove garlic, minced
1 cup fresh pineapple, diced
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
2 tbsp fresh cilantro, chopped
1 jalapeño, seeded and minced
1 tbsp lime juice
8 small corn or flour tortillas
1 cup shredded cabbage
1 tbsp olive oil
Instructions
In a glass bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic. Add chicken cubes, toss to coat, and refrigerate for 30 minutes.
In a separate bowl, combine diced pineapple, red bell pepper, red onion, cilantro, jalapeño, and lime juice. Stir gently and keep chilled.
Heat olive oil in a cast iron skillet over medium-high heat. Add chicken in a single layer and sear for 5-7 minutes until fully cooked and golden.
