Ingredients

1 cup plain Greek yogurt
½ cup natural sweetener (honey, maple syrup, or coconut sugar)
1 large egg
1 teaspoon vanilla extract
1 cup oat flour
½ cup protein powder (vanilla or unflavored)
½ teaspoon baking soda
¼ teaspoon salt
½ cup chocolate chips, nuts, or dried fruit (optional)


Instructions

Preheat oven to 350°F (175°C)
Line a baking sheet with parchment paper
Combine Greek yogurt and sweetener in a bowl; mix until smooth
Add egg and vanilla extract; whisk until fully combined
In a separate bowl, mix oat flour, protein powder, baking soda, and salt
Gradually fold dry ingredients into wet mixture until just combined
Add optional mix-ins (chocolate chips, nuts, etc.) if desired
Scoop tablespoon-sized dough balls onto the baking sheet, spacing 2 inches apart
Bake for 10-12 minutes, until edges are lightly golden
Cool on the baking sheet for 5 minutes before transferring to a cooling rack

Notes

For best results, use room-temperature egg to ensure smooth mixing
Substitute honey or maple syrup for coconut sugar based on preference
Store in an airtight container for up to 3 days
Cookies can be frozen for 2 months
