Ingredients
1/2 English cucumber, thinly sliced
1/2 cup rice vinegar (divided)
1/2 cup water (plus 2 tablespoons for dressing)
1 teaspoon brown sugar (plus 1/2 teaspoon for rice)
2 tablespoons soy sauce (plus 2 tablespoons for salmon marinade)
1/2 cup brown sushi rice
3/4 cup water (for rice)
1/4 teaspoon salt
1/2 teaspoon brown sugar (for rice)
1 tablespoon rice vinegar (for rice)
7 ounces sushi-grade salmon, cubed
1/2 teaspoon fresh ginger, grated
1/8 teaspoon sriracha
6-8 radishes, sliced
1/2 cup shelled edamame
1/3 cup shredded red cabbage
1/2 cup carrot ribbons
1/2 mango, diced
1 avocado, sliced
Sesame seeds, green onions, and cilantro for garnish
Instructions
In a small bowl, whisk together rice vinegar, water, brown sugar, and soy sauce; add cucumber slices and set aside to pickle.
Rinse the brown sushi rice until water runs clear; cook in a saucepan with water, salt, rice vinegar, and sugar until tender.
In a separate bowl, toss cubed salmon with soy sauce, 2 tablespoons water, rice vinegar, grated ginger, and sriracha.
Assemble the bowls by layering the cooked rice followed by salmon, pickled cucumbers, radishes, edamame, red cabbage, carrots, mango, and avocado.
Top with garnishes of sesame seeds, green onions, and fresh cilantro before serving.
Notes
Ensure the salmon is labeled sushi-grade or sashimi-grade suitable for raw consumption. If you prefer cooked fish, you can pan-sear the salmon cubes for 2-3 minutes. Store leftovers in separate airtight containers in the refrigerator for up to one day.
