Ingredients

2.5 to 3 lbs boneless skinless chicken thighs
0.5 cup plain whole-milk yogurt
3 tbsp olive oil (divided)

1 tbsp lemon zest
2 tsp cumin
2 tsp coriander
2 tsp smoked paprika
1 tsp turmeric
0.5 tsp cinnamon
0.25 tsp cardamom

1 large yellow onion, sliced


Instructions

Whisk together yogurt, 2 tablespoons olive oil, garlic, lemon juice, lemon zest, and all spices in a large bowl.
Add chicken thighs to the bowl and coat thoroughly with the marinade.
Place sliced onions at the bottom of the 6-quart slow cooker.
Add marinated chicken on top of the onions.
Cover and cook on low for 4 to 6 hours or high for 3 hours until tender.
Shred the chicken and place on a foil-lined baking sheet.
Broil for 3 to 5 minutes to achieve crispy edges before serving.
