Ingredients
1.5 lbs lean ground turkey
1 small yellow onion, diced
3 cloves garlic, minced
2 chipotle peppers in adobo, minced
1 tbsp adobo sauce
1 tsp chili powder
1 tsp smoked paprika
0.5 tsp dried oregano
2 cups cooked rice
1 can black beans, drained and rinsed
1 cup corn
1.5 cups shredded Monterey Jack cheese
8 large flour tortillas
0.5 cup salsa
2 tbsp olive oil
Salt and pepper to taste
Instructions
Heat olive oil in a large skillet over medium heat.
Add the diced onion and cook for 3-4 minutes until softened.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Add the ground turkey to the skillet and cook for 6-8 minutes, breaking it into crumbles until browned through.
Stir in the chipotle peppers, adobo sauce, chili powder, smoked paprika, and oregano.
Add the cooked rice, black beans, corn, and salsa to the turkey mixture, stirring well to combine and heat through.
Taste and season with salt and pepper as needed.
