Ingredients
2 cups cooked shredded chicken breast
1 (14-ounce) can artichoke hearts, drained and chopped
3 cups fresh spinach, chopped
1 cup cottage cheese
1/2 cup plain Greek yogurt
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese, divided
2 garlic cloves, minced
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Salt to taste
1/4 teaspoon crushed red pepper flakes (optional)
Instructions
Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
Sauté the fresh chopped spinach in a skillet over medium heat for 2-3 minutes until wilted, then set aside to cool.
In a large mixing bowl, combine cottage cheese, Greek yogurt, Parmesan, garlic, onion powder, salt, and pepper until uniform.
